I love a good crab salad. But when I don’t feel like putting my toes in it and just do a quick something to take the edge off, I make my basic salad. This one was done for lunch for me and the baby.
Ingredients:
1/2 pound crab meat
3 ounces pico de gallo
2 ounces chopped onions
sprinkle of parsley (dried or fresh)
mayo
Imitation crab meat. I only used one pack.
This is a 7 oz pico and I almost half.
I like to pull my crab meat apart rather chop it.
Add it all to a bowl and stir in the mayo. I like Hellman’s or Miracle Whip – if I want a more sweeter taste. This time I used MW.
I added just a sprinkle of dried parsley because I didn’t have fresh. I also need to buy more dried, too.
This is how it turns out. You can less or more of any ingredient according to your taste. I had some Pet eggnog with cinnamon sprinkled on top. Of course this plate is just for show.
